Alcohol :: 12.5% From 2005 fruits. Light golden. Quite a heavy sense of saline mineral, sea breeze, peaches, white floral all sum into a highly complex and focus whole. Medium bodied. At first this wine is kinda bold in flavors and lacks of focus. However, the mineral and acidity became brighter when pair with the shiso leaf infused chawanmushi. And when the wine sits in the glass for another 30mins, the profile changed. The sweetness has toned down, less exotic but more on green apple, citrus lime fruits that complex with saline mineral nuances, vibrant! It's goes calmly all the way to the intense yet elegant finished. Very good.

Alcohol :: 13.5% Medium golden. This wine is complex from the start to the end. Why? The flavors keep changing in the glass from time to time. Roasted almond and hazelnut intermixed with sweet honey, sweet herbs and loaded with sea breeze, saline mineral and chrysanthemum with great depth, complexity and class. Slowly, roasted coffee and caramel note emerged. Full bodied, almost oily in texture that giving the creamy mouthfeel. When one thought this could be heavy in that oily sense, richness and concentration but there is this underlying complex saline mineral and sweet acidic backbone to give it a lift and balance. Such a harmony sense and finesse here. The mid palate is almost explosive like but it iPad this Zen like balance and harmony. Sweet start but ended ethereally long, dry and clean with jus a touch of honey spices. I'm glad I manage to get a few more.

Alcohol :: 13.5% Bright medium ruby red. Intriguing Asian spices, hoisin sauce, fresh herbs, earth and wrapped with high tone sweet red cherry and currant. Elegant and precise, the ripeness of the fruits is incredible which give this high acid vintage a good balance and formed the creamy, rounded while the acid perfectly supported from the back. Harmony and pure, refreshing with umami tailing at the long, precise finished. Old vines is really the thin to goes for.
Italy, Tuscany, Montalcino, Brunello di Montalcino
This is consistently good as the previous bottle. Such alluring aromatic profile that is full of charm and fragrance from red and blue flower. Especially the soil, savory tone which will definitely get your hooked as soon as u take a sniff of it. Medium bodied, all about harmony here. A young brunello without any excess acid attack nor new oak. Everything is in perfect balance which highly concentrated yet light on ya feets fruits profile that keep the wine soulful and refreshing. Tannin is well polished and sweet accompany by lots of umami flavors that leads to lengthy, persistently finish. I wine that will keep you drinking. Beautiful.
