Flight 1 - Beluga Caviar with all the trimmings (1 Note)

  • 1975 René Collard Champagne Brut Cuvée Réservée 92 Points

    France, Champagne

    Light gold in color with a very fine bead that dissipated with some time in the glass. Crisp apples and some toast/brioche are evident in this lovely medium bodied Champagne. A medium length finish closes out a wonderful experience. 50+13+13+8+8 = 92.

Flight 2 - 5 mushroom soup (2 Notes)

  • 1993 Domaine Jean-Louis Chave Hermitage Blanc 89 Points

    France, Rhône, Northern Rhône, Hermitage

    Light yellow in color, this wine started out very closed and tight. After some time in the glass it started to drink like a very good young wine and after that like a more integrated wine that seemed like it was on it's way to closing down again. Very waxy with honey and acacia flowers. Drinks much better than a '93 should at this age. Really a textbook example of high quality white Hermitage. 50+12+11+8+8 = 89.

  • 2002 Capiaux Cellars Pinot Noir Widdoes Vineyard 88 Points

    USA, California, Sonoma County, Russian River Valley

    Dark ruby in color, this is a highly extracted Pinot. Flavors of sour cherry dominate on this wine. Was a really nice match with the mushroom soup. 50+12+11+7.5+7.5 = 88.

  • 1994 Zind-Humbrecht Riesling Rangen de Thann Clos St. Urbain 95 Points

    France, Alsace, Alsace Grand Cru

    Medium gold in color, this wine screams Rangen with loads of minerals, stones and peat/earth. This is matched by a laser acidity in this still very young dry wine. Extremely rich and concentrated this will get even better in time. Really great stuff! 50+13+14+9+9 = 95.

Flight 5 - Duck breast with airelles suace, Truffled risotto, Green beans almondine (1 Note)

  • 1997 Domaine Jean-Louis Chave Hermitage 95 Points

    France, Rhône, Northern Rhône, Hermitage

    Decanted for 3 hours. Dark red to light purple in the glass. A little sour cherry but mostly dominated by very meaty and roasted aromas/flavors. Very nice balance and really singing tonight. After this wine was finished the glass continued to smell of a great roasted meat for a long time. 50+13+14+9+9 = 95.

Flight 6 - Cheese course (2 Notes)

    At this point my palate was starting to go downhill in a hurry. Purple in color with chocolate, dark berries, some oak and a little heat on the finish. 50+11+9+7+7 = 84.

  • 1965 Domaine Bourillon Dorléans Vouvray Demi-Sec 85 Points

    At this point my palate was starting to go downhill in a hurry. I would have liked to have tried this under better circumstances. Medium yellow in color, not really showing as a 40 year old wine. Started a little tight but opened some with a few minutes in the glass. Soft, but far from gone. What would a great vintage taste like ( when my palate wasn't shot )? 50+11+10+7+7 = 85.
