Introduction

I was thrilled when my friend chose Pearl and Ash for an overdue catch-up dinner with he and his girlfriend. One of most successful executions of the small plate concepts I've encountered, and the commitment to wines is impressive (though the sabering is over-the-top IMO). All in all, great vibe to which the food and drink live up -- highly recommended.

Flight 1 (3 Notes)

  • 1993 Olga Raffault Chinon Le Champ-Chenin 90 Points

    France, Loire Valley, Touraine, Chinon

I was amazed how open and vibrant this as from the get-go, with a shockingly high level of acidity that made the wine only work well with food, especially the raw hamachi starter. A nice learning experience for me.

  • 1997 Catherine et Pierre Breton Bourgueil Les Perrières 91 Points

    France, Loire Valley, Touraine, Bourgueil

Decanted for an hour. Lovely aromas of rasberry and some dill. Impressive structure, layered and velvety. Faded a bit on the finish, but a well-done, mature cab franc I was glad to have been recommended.

  • 2005 Weingut Robert Weil Kiedricher Gräfenberg Riesling Auslese 92 Points

    Germany, Rheingau

From a 375. Sweet apple and a bit of of petrol on the nose, lush and inviting, and this was matched on the palate: concentrated sweet and floral notes along with some glycerine and petrol. Well integrated, should gain more complexity with age.

Closing

None of the wines was my first choice; the kind sommelier used expressions of interest to guide us to something new, and I love to learn about committed experts' passions. Kudos all around.
