This one looked beautiful in the decanter, a lovely golden amber color. The nose opened up over twenty minutes and revealed wildflower honey, beeswax, and lavender. The palate had some sweetness that came across for me mostly as honey but was balanced by some remaining white fruits. There was plenty of acidity that made me drink this wine a bit faster than I intended. A lovely wine that handled the butternut and sweet potato soup it was paired with quite nicely.

Given the notes in CT, I'd say this bottle was stored cooler than most. This bottle had a very high top shoulder fill and although the cork was nearly soaked through, it came out easily and cleanly. This was decanted for about twenty minutes and opened up for another ten to fifteen during tasting. The Angelus was light tawny in color and the nose yielded an incredible array of aromas. I picked up on dried leaves, forest floor, and a meaty component that Brian nailed as cured meat. The palate yielded the forest floor, dried tobacco, scorched earth, and the same cured meat that perhaps resembled some proper salamis. Although the fruit had totally faded and there was no noticeable structure remaining, it was a wonderfully complex wine. Many would describe this wine as in the decline and I do not doubt it might have been a bit livelier several years ago, but it was perfectly attuned to my tastes. Tremendous.

An incredibly silky smooth wine that showed dark fruits (plums, blackberries), wet tobacco, mild spice, and a mint-like component. There remains plenty of acidity. This one really lingers on the palate. This wine continued to evolve while the wine lasted. It was paired with wine (super tuscan) braised short ribs and sauteed shiitake mushrooms.
What better way to end the night than to pull out a truly mature dessert wine? The Coutet had a top shoulder fill and a cork that came out remarkably easily and showed no deterioration despite some significant soaking. This was caramel in color, approaching the appearance of scotch. Over the next thirty minutes a dazzling array of aromas and flavors came forward. Caramel, toffee, molasses, beeswax, honey, pineapple, tangerine, and a nuttiness that resembled pecans or perhaps pralines. I didn't know what to expect from this wine and was shocked by its complexity. A truly remarkable wine that I will not soon forget.
