Retrospective Old and Older Treasured wines 1955

Introduction

My turn to host the "Flock" and with the help of my wife Linda we used a '55 wine (older) and paired it with an Old, liked wine. Used all 6 grapes (chenin, sauvignon blanc, pinot noir, cab sauvignon, syrah and semillion) and served blind. Food was matched perfectly and with the age of the '55's, the wines definitely were elevated. Thank you to Marchello and the staff at Michael Restaurant.

Butlered Passed Hors d'Oeuvres
Champagne was out of magnum.

Flight 2 (2 Notes)

Duo of Foie GRAS au Torchon and Foie GRAS Ceme Brûlée, cognac scented golden raisins, warm housed baked brioche.

  • 1955 Colnot a Rochecorbon Vouvray 92 Points

    France, Loire Valley, Touraine, Vouvray

    Light apricot color, sweet nose, developed in the glass, good balance on the palate. I always have liked this wine and will continue to like it.

    Light apricot color, delightful and forward fruity nose, distinctive and appealing on the palate. Great bargain and great pairing with Foie grois.

Polenta crusted pan fried loup de mer, celeriac mousee, poivron tapenade.

    France, Bordeaux, Graves

    Initially off putting, turpentine, but since this was old it really opened and developed quite nicely in the glass distinctive cab Sauvignon flavor.

  • 2005 Domaine de Chevalier Blanc 88 Points

    France, Bordeaux, Graves, Pessac-Léognan

    Clean color like ever clear, really off putting like cat urine but once again in the glass this developed quite nicely and really needed time in the glass.

Duo of roasted breast of duck & duck and black trumpet galantine, sweet potato purée, micro turnips, smoke duck jus.

Flight 5 (2 Notes)

Duo of petit navarin & roasted rack of lamb, gratin potato, lamb jus natural.

    France, Bordeaux, Médoc, Saint-Estèphe

    Once again the age of the wine, it's prior storage were impeccable. Very good color, light browning on the edge, good fruit and a slight sweet finish.

    WOTN. Wow statement, paired with the '55 and the initial differences were small. As this wine developed it grew in abundance in the glass and with a rack of lamb, OMG.
