Porcelet Dinner with Great Wine

Introduction
Great dinner last night courtesy of the combined forces from Paris Club, d'Artagnan and St. Canut Farms (outside Montreal). Dinner used basically every part of these amazing little pigs. In particular, the braised pork shoulder cannelloni with hen-of-the-woods mushroom was noteworthy. It was fun and educational talking with the owners of St. Canut Farms about their process and passion that brought them to this artisanal level of quality. Of course we brought our own wines to match the menu.
2008 Domaine des Croix Corton-Charlemagne 92 Points
France, Burgundy, Côte de Beaune, Corton-Charlemagne Grand Cru
Popped and poured with plenty of yellow and green apple with lemon notes throughout. Very good concentration and length. Fairly assertive acidity today with good minerality, I'd expect this will be better in another 2 or 3 years.

2002 Domaine Marquis d'Angerville Volnay 1er Cru Clos des Ducs 93 Points

Bottle had been open several hours before served. Lots of red berry aromas and flavors, slightly lean styled for the ripe vintage but with very good concentration. Great spice throughout with some anise, Herbs de Provence and some fresh thyme. Elongating structure in the background.

1994 E. Guigal Côte-Rôtie La Mouline 94 Points

Open 2-3 hours, not decanted. Mature black fruit with very good spice. Everything here is in balance, making this very charming and pleasurable, with moderate power and length. Very good now, but with the structure to hold.

2000 Henri Bonneau Châteauneuf-du-Pape Réserve des Célestins 94 Points

Decanted for a couple of hours. Lots of ripe, concentrated black fruit with meaty character, sweet spice and hints of liqueur. Slightly gamy with lots of nuance and texture. I think the decanter time really helped bring this forward, and I imagine this will hold great for a long time.

Open several hours before tasted. Black fruit starting to show some earthy hints, very good spice, some charming cigarbox notes. Drinking very well now with every component in harmony, with just the perfect degree of extraction for this vintage. Very well integrated structure that I expect will maintain this very good level of balance for a decade going forward.

Open and decanted for a couple of hours, which just didn't seem like it was long enough. Very high quality black fruit with meaty, gamy character and good spice, but there were more hints and traces of this quality. This was never really 100% forthcoming tonight.
