Interesting nose with citrus, flor, hay, medicine, fresh for what it is. Nutty, dry and with a little licorice. Bigger than the manzanilla following it. Excellent.

At first quite extreme after the Jarana fino: sharp, kind of ultra fresh, salt and bitter - all this in an exciting and lively way. With air it becomes more approachable and even shows hints of golden fruit. Fantastic combination with a complex gambas dish. Outstanding.

Wonderful nose of raisins, cigars, leather grease, and a hint of salt. Dry, medicinal, complex, oxidised and with hints of red wine. Outstanding.

Not terribly complex but very nice, really the classic cream sherry with raisiny sweetness in a harmonious and balanced way. Excellent.

No proper notes and the memory from this part is not completely clear ... I vaguely remember it as not being the heaviest and sweetest kind of PX although it was said to have a staggering sugar content of 416 g/l. Great pairing with a magnificent dark chocolate and blue cheese dessert.
