Our final dinner together on the trip was at Ma Cuisine in Beaune.
We had an excellent dinner, perhaps the best on the trip. The 12 escargot done the traditional Bourgogne way (with garlic butter and chives), was superb, as was the magret, and particularly the pinot noir jus (reduction). We finished with a good selection of well-matured cheeses.
The wines were:
2010 Michel Bouzereau et Fils Meursault 1er Cru Les Perrières
France, Burgundy, Côte de Beaune, Meursault 1er Cru
Colour fairly deep gold but no sign of premox. It was served way too cold, but as it warmed up I got aromas of small white flowers, a little honey and beeswax, Meyer lemons, yellow orchard fruit and some wet river stone. Although it was a Meursault, it was not mealy or nutty on bouquet. With time in the glass, the aromas moved towards spices and cinnamon. On the palate, a slightly sweet entry, then very clean, fresh and precise. Lovely structure and serious mid palate fruit weight, length and power, clearly Meursault. Good acidity that cut through the garlic butter on my escargot beautifully. The flavours were stone-fruit, particularly peach, pear, lemon, some wet rock and minerals. The Bouzereau could however do with more complexity on the palate, but that may come with time.

2001 Hospices de Beaune Corton-Cuvée Docteur Peste Maison Christian L. Remoissenet

Impenetrable colour. A beautiful, evolved Corton bouquet. with a perfumed floral top note (violets?). Also, almost liqueur-like, with black berry fruits, old spices and a touch of pepper. With the time, the spice on bouquet intensified. Good on palate, but probably better on bouquet. In the mouth, very primary and powerful with flavours of wet earth and black fruits, blackcurrants and dark cherries. There is a huge volume of fruit here, the wine is large scaled with big, but refined tannins. With time in the glass, the wine softened. It went sensationally with both my magret and my Abbaye de Citeaux cheese. This wine is drinking well now, but ideally give it 3-5 years. Alcohol moderate at 13.4%.
