Introduction
This was a fabulous tasting. Even the starter wine, the NV Brut Reserve, was darn good. I didn't care much for the Blanc de Blanc while others liked it. Nobody at my table cared much for the Rose.

Quite elegant and refined. Light and complex. Good acidity, slightly floral, lots of minerality.

Yeast on the nose for a change (NV Brut Reserve and Extra But didn't have any), but not much yeast or bready-ness on the palate. Crisp, elegant palate.

2000 Billecart-Salmon Champagne Cuvée Nicolas François Billecart 93 Points

Considerable funk. Tasted alongside the 99, this was a lot bigger, drinking a LOT younger such that it still has some baby fat. Good today, should be better in a couple years.

NV Billecart-Salmon Champagne Brut Rosé 88 Points

This was poured after the 1999 and 2000 Cuvee Nicolas Francois, and it did not stand up to them in the slightest. This seemed quite pedestrian compared to the other Billecart Salmon champagnes at this tasting.
