Introduction

This was the Chicago chapters historic 800th dinner and 80% or 75 male members were in attendance. Our cellar is very deep and the wines for the evening were really stellar. We chose to dine at the Racquet club because of the setting and for Chef Brand's ability to match his cuisine with these wines. Overall the friendship and the evening were truly remarkable.

There were two other rare Maderia wines. 1934 Verdelho Cossart Gordon and a 1934 Verdelho Justino Henriques that I did not get a chance to taste.

Foie Gras Torchon, Ginger Lime Gelee, Brioche

Demi Smoked Squab, Salsify, Perigord Truffles

duet of Colorado Lamb Chop and & Braised Shoulder, Celeriac Purée

A Selection of Cheeses-Crottin, Red Rock Aged Cheddar, Vacca Rosa

    France, Bordeaux, Médoc, Margaux

    Out of magnum and the last of the societies btls. Beautiful bouquet, feminine, perfume, elegant and developed quite nicely in the glass.

    France, Bordeaux, Graves, Pessac-Léognan

    Out of a 5L. Initial off of putting nose,developed in the glass with a clear red ruby color, long finish.
