A fantastic sorbet served with a couple of chocolate truffles. The sorbet was a perfect way to cleanse the palate and finish up.
NV Jean Laurent Champagne Blanc de Noirs Brut

A nice, rich bubbly with some definite Blanc de Noirs character. I'm more of a BdB fan myself, but this was still a nice way to start.
