Quality Chop House

A little too warm, and the glasses a little too small. Fresh, focused and with good Chablis typicity. A slightly vegetal bite to the saline minerality. Focused and quite precise. Long. Holds up well over several hours. Kore recognisably Chablis than the richer Clos alongside. ****

Served a little warm and glasses too small. A little richer and fuller than the Preuses. Similar on palate. A richness and density here and apparent ripeness that has people in the Cote de Beaune. Proper GC weight, and it is doing that maturing GC Chablis thing of being more C de Beaune than Chablis. Really quite full and persistent. Lovely without being electrifying. In this environment the Clos shines, whereas previously the Preuses has had more precision and focus, but possibly overlooked here. ****

Blind. Lovely bright red fruit. The exposed capsule reveals this as Lafarge. Some maturity, and a lovely, vibrant, mid to light ruby colour, with the faintest spine of soft tannin suggests 2001. Very pretty, but with a good mineral line keeping it in check. A filigree, lacy quality to the red fruit. Long and lingering. Light but not inconsequential, and good length. Finishes well. ****

Light ruby to mid garnet. Bright and vibrant. Slightly earthy strawberry fruit. Red-fruited Cote de Beaune. Smooth and harmonious though possibly lacks a little polish and depth. A fraction superficial. Once Corton is established, I wonder whether it's 92. Soft, mellow and pretty. ****

Blind. Despite having drunk this six weeks ago, I don't recognise this. Pretty similar note though. Tight, dark red fruited. A good dose of dry extract. Chewy. Quite long and promising. Needs five to ten years. ****

Blind. Dark fruited. Very dense, sulpherous, heavily reduced nose. So densely so that it smells like heavily charred new oak. Very toasty. Decanted. Poured from glass to glass, pennies dropped in. No change after a couple of hours. Impenetrable. Oh dear. NR

Dark red fruit. A fragrant, slightly volatile lift. Quite evolved on the nose, but dense and still chewy on the palate. Something slightly animale or agricultural here. Dense and fine tannins but with an exuberant lift. lovely dense ruby. I wonder whether it could be a good Fixin. Nuits apparently, but I wouldn't have guessed. Interest here, but needs time. ****

Blind. Fresh. Nicely clean and refreshing. B de B. Not the chalky minerality and finesse of, say, Lilbert, but quite clean and fresh. Dosage evident. Easy drinking and, without being disparaging, a genuinely good aperitif style. ***
