Introduction

Sprig'd it up - Mildly spicy Jerk chicken with a slow burn that built. Brown rice, very mild mango salsa, and a slightly sweet, nutty cabbage salad.

    Nose: high-toned green apple - candy.
    Pairing with slightly spicy jerk chicken, mild mango salsa, rice: * (good but nothing special) Acidity increased the spiciness a bit.

    Nose: initial whiff of clear TDN - pool-toy/beach-ball/petrol. hint of botrytis.
    Pairing with slightly spicy jerk chicken, mild mango salsa, rice: * Acidity was refreshing but increased the spiciness.

    Nose: tone of warm amber - like ripe banana/ripe peach/ripe apricot. baked peach. Also ripe peach bitterness - hint of thiols.
    Pairing with slightly spicy jerk chicken, mild mango salsa, rice: * Very nice flavor richness balance, but the alcohol plus spiciness of the chicken caused a burning.

Closing

The wines all played pretty well with the food, with the Boxler being my favorite pairing (but really, it's just my favorite of all the wines).
