Semi-annual dinner with the perfect host Jay Ginsberg in Singapore. Cali theme with some classic fare - salad, steak and cheese.

Very very chilled and therefore extra tangy Caesar paired well with the aged wines. Great opening fare for a boys night with steak.

  Always a winner, such value and surprises me that they can make such a satisfying rose champagne without charging an arm or leg for it. Bravi.

• 1975 Joseph Phelps Cabernet Sauvignon Eisele Vineyard 93 Points

  Well preserved, this had a hint of cloud on first contact but then snapped back into its youthful vigour, with lovely cherries, blackberries and leather. A find body and decent finish shows this is aging remarkably well. To be enjoyed.

  Named for the winemakers daughter, she must be quite a firecracker. This was perfumed with exotic spice, pepper and summer greens. Good structure held the flavours together well.

Steak was a little thin but of good flavour. Amazing Abreu was just he purest wine one could find and the Midnight Oil was in an awesome spot.

  Lovely mature fruity drinking with a light, singing quality and a very pleasant finish. Hints of herbs, cut grass and leather. Tannins resolving nicely.

• 2001 Sine Qua Non Midnight Oil 97 Points

  Stunning showing of SQN's way with wine - convinces me that 15 years is about the time needed for a lay down of these massive bottles of pure hedonistic elixir. Nose of lavender, spice, sandalwood, honey, toast, lime and smoke. Lean, unflabby and sharply focused in the mouth, with intense fruit concentration, hints of game, chocolate, tobacco and vanilla to savour. Tapers into an elegant long but SUPER silky finish, lingers on the tongue for ages. Lightly dusted with super fine tannins. Well worth savouring even though so little of it is left..

• 1994 Abreu Cabernet Sauvignon Madrona Ranch 98 Points

  An outstanding bottle that was piercing like a garnet, a concentration of fruit and integration of alcohol that I have only encountered in 1-2 other bottles, and reminded me of the Artadi El Pison 1995. Subtle undergirth of strength gives this wine presence and approachability. Gorgeous.

A very generous cheese platter, wish the steak was at this scale too.

• 2005 Sine Qua Non Grenache Atlantis Fe2O3~2a, b & c 93 Points

  USA, California

  Strong, concentrated with that signature candied toffee apple nose, this can still develop. In the glass it was all concentrated fruit, chocolate, liquor, leather, honey but it didn't sing as much as expected, especially side by side with the Midnight Oil. To be revisited in a couple of years.
