Flight 2 - Served blind. Decanted 1 hour. (3 Notes)

Caramelized fennel, on squid ink Israeli cous cous. Goats curd. Garnished with lemon rind and dill.

Flight 3 - Served blind. Decanted 2 hours. (3 Notes)

Slow cooked beef cheeks in Pedro Ximenez. Cauliflower purée. Steamed greens.

    Another wonderful bottle. Notes of tomato leaf, black berries, cedar, but somehow distinctly Australian. Well balanced again, with tertiary flavours - earthy, mushrooms, soy.

    New Zealand, North Island, Hawke's Bay

    Cassis, cedar, pine, blackberry. Aromas jump out from the glass. Very appealing. The palate is so elegant. Medium bodied, integrated tannins, silky, long. Just a terrific bottle. Easily mistaken for quality Bordeaux.

    France, Bordeaux, Médoc, Pauillac

    Cassis, cigar, dried herbs. Really elegant in the mouth. Typical Bordeaux style. Medium bodied, fine boned, fully resolved tannins. Excellent wine.
