Introduction

Tasting of a few Chablis wines with friends

Flight 1 (4 Notes)

  • 2015 Domaine Christian Moreau Père et Fils Chablis

    France, Burgundy, Chablis

Nice wine but was out classed by the Grand cru that followed so hard to give a fair review.

Riper than I am used to for a Chablis, Yellow apple, ripe pear, banana and maybe even a hint of apricot on the nose. Very little of the Chablis mineral edge I am used to. Slight sign of lees, and more citrus on the palate, lime and even a meyer lemon. Acidity was low for a Chablis as well.

  • 2009 Jean et Sébastien Dauvissat Chablis 1er Cru Vaillons Vieilles Vignes

France, Burgundy, Chablis, Chablis 1er Cru

Riper vintage it was obvious from the first sniff, ripe apples, pears, and a slight melon, almost in-ripe melon if that's possible... Showed signs of it's age, mellowed out on the acidity. Mineral edge is obvious instantly with more citrus on the palate as well. Not as racy as many Chablis, to the point that this would not be my favorite with oysters, but was amazing with Halibut. My 2nd favorite of the night

  • 2007 Domaine William Fèvre Chablis Grand Cru Les Preuses

France, Burgundy, Chablis, Chablis Grand Cru

Of all the Chablis's this evening I would have believed this was the youngest tasted blind. just so alive, racy with oyster shell and a limestone edge, almost salty. Lime Zest, Granny Smith apple and a touch of Orange on the palate. This was a great Chablis, just perfect a perfect wine for seafood, so racy! This taste like it could live on another 40+ years, but that may be pushing it. Drinking it felt like we were baby killing a 10 year old white... My favorite wine of the night

  • 2012 Domaine Romain Collet Chablis Grand Cru Valmur

France, Burgundy, Chablis, Chablis Grand Cru

A slight lemon edge on the nose, but very little reminded me of Chablis. aromas of oak were very apparent. Crisp apple and maybe a hint of mineral, but honestly I would have pegged this as a Cote de Beaune blind. I did get a little from what appeared to be lees stirring, but more in the back ground. This was nicer than the village, but I preferred the Dauvisot Vaillons VV to this... A nice wine, especially if you like CdB whites, just didn't scream Chablis...
