Introduction

A pescaterian challenge on a Sunday afternoon

Flight 1 - The Welcome (2 Notes)

24m Parmesan vs 30yr old Balsamico
Smoke Salmon open sandwich - spiced sour cream, capers
The Egg before the Chicken

  • 2006 Dom Pérignon Champagne 94 Points

    France, Champagne

This wine oscillates between 93-95 for us and we wonder whether most of it is mood and situation dependent rather than the wine. (Most likely so) . Solid as always and with that DP class and elegance as well as star factor that make it one of the best ways to kick off a dinner. It is less focused than the usual DP style a bit rounder and in a way forward but also drinks superbly now. This is not one to age we feel but DP is DP and always keeps on surprising us .. like the 2000...

    Italy, Lombardia, Franciacorta DOCG

    Summer 2013 Disgorgement.
we have this once a year it seems and always delivers. Still going strong, still very vibrant and for those in the know draws as much admiration as Dom Perignon. Very solid and on point. 92-93

Flight 2 - The Main Event (3 Notes)

Turbot in the oven , whole

  • 2011 Didier Dagueneau Pur Sang 92 Points

France, Loire Valley, Upper Loire, Pouilly-Fumé

Really impressive and surprisingly vibrant for a 9yr old.
Bright lemony, limes, soft grassy edge, floral and effortlessly elegant. Mineral for sure and makes for very solid start to any dinner. In the past we sort of felt these wines loose their charm as they age! We stand corrected. 92

  • 2012 Ridge Chardonnay Monte Bello 93 Points

    USA, California, Santa Cruz Mountains

2 years to the days since we had this last ( Papies 93) and continues to deliver.
Granted one must like the style of the flamboyant and oaky chardonnay or have it with food that complements ( oven roasted turbot was a perfect match) . For us not the go to style in white but still we could not but admire its quality. Lemony, bright, full on oaky and vanilla spectrum but adding o the wine in a way albeit on the top end of oak use. The wine still has a lot of substance for sure. Solid 93 and continues to age very gracefully.

Flight 3 - The Cheese (1 Note)

Epoisses, paired with candied walnuts from Cyprus
Comte, 24m

Flight 4 - The Sweet finish (1 Note)

Neal's Pudding

  • NV José Maria da Fonseca Moscatel de Setúbal Trilogia 95 Points

Portugal, Península de Setúbal, Moscatel de Setúbal

3 years since we had this last (Papies 94) and this time we gave it the right attention too.
A very elegance and softer version of a Port is what we could describe it as , less of the fruit, less of the power and just a lightness to it relatively speaking. Nutty, soft oxidative, soft balsamic, light caramel. Very Very good. 95

lend of the 1900,1934 and 1965 ( the best 3 vintages according to Domingo Soares Franco, the senior wine maker) and released only 13,926 bottles.
