My mother-in-law and her boyfriend have spent several months visiting us in Seattle each of the last 3 summers. This year they will be spending closer to 6 months here, and today they completed a 4-day drive cross country from Tampa to arrive in time for dinner and to play with their 2 year old grandson.
As they walked in the door I popped a cork on a 375ml of Rose Champagne so we could have a quick toast. And while I prepared dinner they sipped this with cheese and crackers.
Dinner was a simple affair, grilled wild King salmon, grilled asparagus, grilled rapini, sauteed shiitake mushrooms Asian style, and steamed rice. With it I uncorked a Pinot that I though would match well with the salmon, and indeed the match was perfect.
NV Billecart-Salmon Champagne Brut Rosé 89 Points
France, Champagne
Strawberry and the faintest hint of sherry. The palate is clean, mineral, light and fresh. Lots to like here.
