Bottle No. 491/3000, 12 years old, 15% ABV. Saca de Noviembre 2021, so it's almost like tasting it directly from the bota. Pale golden colour, complex aromatics, clear hint of aniseed, silky and seamless, yeast and flowers and nuts, green olive, dry but smooth and refined, so fresh and natural, excellent resonance and length.
Decanted. Firm acidity, youthful structure, dusty but paper fine tannins, almond cookie, roses and spices, concentrated but transparent, youthfully austere but beautifully balanced, perfect weight, hint of grappa on the finish, very good length. Marries concentration and finesse. Good future.
Half bottle. Four years ago, tasting this at the Château, I thought it was in a slightly difficult stage. No such difficulties today. Rich and concentrated, very pure botrytis, like tasting an overripe grape in the vineyard, hint of salinity, honeyed but fresh, the savoury oak is not resinous, firm structure, almond cream finish. Early maturity, long life. A perfect match for the creme brûlée.
