Introduction

Panos was in town and organized a Mouton dinner. La Chaumiere's dishes were classic and perfectly executed. Perhaps due to not drinking a lot of Bordeauxs lately, I noticed the green Cabernet note on most of the Moutons.

Flight 1 - Champagne (4 Notes)

The 08 Dom Perignon was a great example.

  • 2008 Dom Pérignon Champagne 98 Points

    France, Champagne

    Incredibly elegant and energetic nose displaying fresh white fruit, granny smith, apple soda, lemon curd, honeysuckle, brioche, white chocolate, perfume, spearmint and limestone. Excellent concentration, beautifully layered generous but delicate white fruit, very fine generous mousse, elegant and delicate but also precise, energetic and weightless, perfect balance, bright acidity, strong limestone mineral, and a seamless long fresh white fruit driven finish with smoke and spearmint at the end. This is one of the best showings, i.e. elegant and harmonious.

  • 2012 Philipponnat Champagne Extra Brut Clos des Goisses 97 Points

    France, Champagne

    More intense yellow than the 08 DP. Expressive nose displaying rich yellow fruit, baked apple, yellow peach, lemon curd, light caramel, sweet spices and mineral. Exceptional concentration, layers upon layers of sweet yellow fruit, fine medium generous mousse, rich and deeply toned, bright acidity and limestone mineral, and a long concentrated ripe yellow fruit driven finish with caramel and brioche at the end. This clearly expresses the richness of the 12 vintage and the house style.

  • 2012 Larmandier-Bernier Champagne Premier Cru Terre de Vertus 93 Points

    France, Champagne, Champagne Premier Cru

    Expressive nose displaying rich yellow fruit, apple, lemon curd, a hint of licorice, caramel, sweet spices and earth. Very good concentration, nicely layered generous yellow fruit, medium fine medium generous mousse, rich, good balance, medium acidity and mineral, and a long sweet yellow fruit driven finish with caramel at the end. This is drinking nicely with generous yellow fruit.

Flight 2 - White (3 Notes)

  • 2014 Domaine Georges Vernay Condrieu Les Chaillées de l'Enfer 94 Points

    France, Rhône, Northern Rhône, Condrieu

    Golden color which is a bit of concern. Beautiful complex nose displaying sweet yellow fruit, peach, lychee, candied orange peel, honey, caramel, coriander seed and sweet spices. There is a strong “Condrieu” floral note which I didn’t find from the last bottle. Fully integrated palate, very finely layered sweet yellow fruit, rich and deeply toned but also showing a good balance and precision, medium acidity, not showing much mineral, and a long ripe yellow fruit driven finish with caramel and coriander seed at the end. This has aged surprisingly well, drinking beautifully.

    France, Burgundy, Côte de Beaune, Bâtard-Montrachet Grand Cru

    Medium expressive nose displaying ripe yellow fruit, lemon curd, a hint of apple tart, light caramel, lactic and medium mineral. Initially, there is a bit of bottle funk. Fully integrated palate, nicely layered yellow fruit, good balance, medium acidity, medium mineral, and a long ripe yellow fruit driven finish. Drinking nicely but lacks excitement.

  • 2010 Domaine William Fèvre Chablis Grand Cru Les Preuses 95 Points

    France, Burgundy, Chablis, Chablis Grand Cru

    Beautiful light color which is a relief. Expressive nose displaying generous yellow citrus fruit, flint, white flowers, sesame, pine needle, saline and crushed rocks. Excellent concentration, nicely layered yellow citrus fruit, excellent precision and balance, bright acidity, incredibly mineral, and a long yellow citrus fruit driven finish with pine needle at the end. This is a classic mineral driven Chablis that is showing beautifully.

Flight 3 - Mouton - Flight 1 (3 Notes)

  • 2019 Château Mouton Rothschild 97 Points

    France, Bordeaux, Médoc, Pauillac

    Expressive nose displaying primary black and blue fruit, crushed blueberry, crème de cassis, ink, licorice, a hint of mocha, dark flowers, dark spices and crushed rocks. There is a strong Cabernet green/jalapeño note. Excellent concentration, layers upon layers of intense perfectly ripe black and blue fruit, rich but silky and weightless, exceptional finesse, perfect amount of acidity and mineral, tannins fully masked by generous primary fruit, and a seamless long concentrated black and blue fruit driven finish with a hint of licorice at the end. Since not showing obvious tannins, someone mentions the more approachable wine making style. IMO, most well-made young Bordeauxs will not show much tannins due to the generous primary fruit. It will take a few more years before the tannins become more noticeable. I really love the freshness. This is a classic Cabernet Sauvignon driven Mouton.

  • 2002 Château Mouton Rothschild 94 Points

    France, Bordeaux, Médoc, Pauillac

    Youthful nose displaying concentrated black fruit, crème de cassis, blackberry, ink, dark chocolate, a hint of oak, lead pencil, dark spices and earth. There is a hint of green similar to the 19. Excellent concentration, layers upon layers of concentrate black fruit, rich and unctuous, good acidity, earthy mineral, coarse tannins and a medium to long ripe black fruit driven finish. This is a bit chunky and rustic which I often have found in the 02 Bordeauxs. This remains still very youthful and can easily improve for a couple more decades, gaining cedar and leather, and perhaps becoming more harmonious.

    Expressive nose displaying concentrated youthful black fruit, blackberry concentrate, crème de cassis, crushed blueberry, ink, floral perfume, ash, lead pencil and crushed rocks. Exceptional concentration, layers upon layers of intense black and blue fruit, rich and intense but also showing exceptional balance, detail and silkiness, perfect amount of acidity, strong mineral, soft sweet tannins, and a seamless long rich youthful black and blue fruit driven finish with lead pencil and dark flowers at the end. This is developing beautifully showing better balance and harmony than six years ago. MY WOTN.

    Expressive nose displaying blue and black fruit, crème de cassis, blueberry, ink, strong eucalyptus, a hint of mint, tobacco, cedar and earth. Very good concentration, cool black and blue fruit, bright acidity, strong earthy mineral, slightly dry tannins and a medium to long blue and black fruit driven finish with eucalyptus and mint at the end. This seems a bit hollow and lean, and also more developed than the 96.

    Expressive nose displaying perfectly ripe blue and black fruit, crème de cassis, blackberry concentrate, blueberry, coffee, ink, lead pencil, cedar and mineral. There is a hint of green similar to the other Moutons. Perfectly integrated palate, finely layered generous black and blue fruit, rich and generous but also silky, polished and beautifully detailed, bright acidity and strong mineral, beautifully integrated fine tannins, a long generous black and blue fruit driven finish with a hint of lead pencil and coffee at the end. This clearly expresses the classic 96 vintage. Although exceptional, the 96 Mouton may be not as refined as the 96 Lafite or Margaux.

    Expressive nose displaying concentrated black fruit, crème de cassis, blackberry concentrate, mocha, dark chocolate, lead pencil, dark spices and mineral. Excellent concentration, layers upon layers of generous black fruit, rich and generous, bright acidity, strong mineral, still noticeable tannins and a long concentrated black fruit driven finish with mocha and lead pencil at the end. As expected, this shows more roasted fruit than the 96. It expresses the 95 vintage well, i.e. concentrated roasted fruit and strong structure.

Flight 5 - Mouton - Flight 3 (3 Notes)

  • 1988 Château Mouton Rothschild 93 Points

    France, Bordeaux, Médoc, Pauillac

    Medium expressive mature nose displaying generous red and black fruit, strawberry jam, crème de cassis, plum, eucalyptus, mint, ash, lead pencil and earth. The green bell pepper nose is very pronounced. Fully integrated palate, subtle red and black fruit, silky, fresh, slightly lean, medium acidity, earthy mineral, slightly coarse tannins and a medium long subtle red and black fruit driven finish with eucalyptus and lead pencil at the end. This and the 98 are the leanest and also show coarse tannins.

    Beautiful fully mature nose displaying sweet red fruit with a hint of black, strawberry jelly, red currant, a hint of crème de cassis, plum, light caramel, cedar, leather, sweet spices and earth. Fully integrated palate, generous red fruit with a hint of black, soft, warm and round, perfect amount of acidity and mineral, no noticeable tannins and a long sweet red fruit driven finish with cedar and caramel at the end. This is fully developed and drinking beautifully.

Flight 6 - Yquem (2 Notes)

  • 2003 Château d'Yquem 96 Points

    France, Bordeaux, Sauternais, Sauternes

    Expressive nose displaying super concentrated ripe yellow fruit, peach, mango, pineapple, clementine, crème brulee, honey, strong saffron, light caramel, sweet and spicy spices and mineral. There is a strong botrytis note. Exceptional concentration, layers upon layers of decadent slightly dry yellow fruit, rich and unctuous but also beautiful balance and detail, perfect amount of acidity, medium mineral, and a long ripe yellow fruit driven finish. Perhaps this show better concentration than the 05 but showing less acidity, hence not as fresh and precise.

    Expressive nose displaying decadent concentrated yellow fruit, yellow peach, mango, pineapple, candied orange peel, honey, ginger tea, saffron, crem brulee, sweet spices and mineral. Excellent concentration, layers upon layers of concentrated sweet yellow fruit, rich and opulent but also perfectly precise and balanced, bright acidity, good limestone mineral, and a long concentrated yellow fruit driven finish. I slightly prefer this to the 05 for showing better balance and precision.
