    France, Burgundy, Bourgogne-Aligoté

    From a 0.2 ha parcel with vines planted in 1983, 1984 in the lieu-dit Aux Boutières in Savigny-les-Beaune, on clay-limestone and marl soils. Farmed by Seiichi Saito, biodynamic (not certified). Direct press, indigenous yeast fermentation in barrel with no added sulfur. Aged in older wood for nine months, then racked with minimal SO2 adjustment, bottled unfined and unfiltered. Clear and bright and pure, dry and chalky finish, energetic but it lacks varietal expression (especially on the nose), it feels a bit neutral.

    From Sur le Bois and Sur Rigole, organic viticulture, 100% destemmed, 13% ABV. Beautiful purple colour; expressive nose, fresh raspberries and cherries, nice spicy depth; bright and crisp palate, cranberries, savoury and peppery, elegant but rich texture, sandy tannins; very good resonance and length, flowers and a whiff of cherry stones.
