    Chenin Blanc from Cahors. Spontaneous fermentation, aged in older wood, bottled unfined and unfiltered, no sulfur added. Relatively full buttercup yellow colour; wonderful minerally freshness on the lifted nose, lovely varietal typicity, linen and chamomile; great tension on the bright and energetic palate between succulent fruit and electric acidity, medium body (13% ABV), gentle bitters; complete finish, floral, whiff of yeast, with very good resonance and length. A beautifully clean and clear expression of natural Chenin Blanc in an unexpected part of France.

    France, Burgundy, Bourgogne Hautes-Côtes de Beaune

    Made with apples from Burgundy, fermented in oak barrels, bottled by gravity, unfilitered, no sulfur added, 7% ABV. A wonderfully pure and precise apple cider. Fullish dandelion yellow colour; whiff of wood on the nose, floral lift; crisp and fresh on the palate, apple juice, bright but fine mousse, hint of almond paste; lovely drive and energy on the finish, with beautiful apple skin notes.
