Introduction

David Wolf from Petrus was in town for a moment, and after an introduction through some mutual acquaintance we were able to arrange a small dinner.

As I finished cooking and everyone arrived, this was a stunning, young sipper!

Flight 2 (3 Notes)

And then some Bordeaux.

    Stunner. So traditional. Lean, dark, brooding. Very pure. Mineral. Lovely. Just delicious and satisfying with a steak.

  • 1985 Château Haut-Brion

    France, Bordeaux, Graves, Pessac-Léognan

    Haunting. Smoky, chicory, lovely cherry, slightly tense and structured still but in a regal, silky way. So pretty, so poised.

  • 1990 Château Beausejour (Duffau Lagarrosse)

    France, Bordeaux, Libournais, Saint-Émilion Grand Cru

    Insane. Dense. Powerful, brooding. The more this ages the more the structure starts to appear. A nice cocoa, bitter element.
