Dinner at the outstanding two star restaurant Frederikshøj in Aarhus, Denmark. I profited from their fabulous wine cellar and had the the following wines, all wonderful, with th Chablis perhaps as my favourite. My notes are from memory and perhaps somewhat rudimentary:
2008 Diebolt-Vallois Champagne Fleur de Passion Brut
France, Champagne
Less impressive than I would have liked but still very good, a great aperitif.

2012 Domaine Billaud-Simon Chablis Grand Cru Les Preuses
France, Burgundy, Chablis, Chablis Grand Cru
Magnum. I have had way too little mature grand cru Chablis I see from this one: what a beauty! Rich and restrained, texturally complex, sort of juicy and mature, round and sharp. A marvelous complex balanced wine.

2008 Domaine de Chevalier Blanc
France, Bordeaux, Graves, Pessac-Léognan
Oxidative and with lots of wood and also a perfect accompaniment for rich food. Very interesting.

1999 Domaine Tollot-Beaut Aloxe-Corton 1er Cru Les Fournières
France, Burgundy, Côte de Beaune, Aloxe-Corton 1er Cru
In impressive shape. At nearly a quarter of a century this was perfumed and complex and very much alive. Great pleasure.

1994 Trimbach Gewurztraminer Sélection de Grains Nobles
France, Alsace
Deep golden and very rich with so much botrytis as to mask even this normally unmistakeable variety. I remember it as more rich than sweet but some sugar there must have been. Great pleasure.
