Made from Tamasakae rice, polishing ratio 60% (both koji and kake), kioke-jikomi, junmai, 15% ABV, produced August 2023. Subtle aromas, mildly woody, gentle sweetness, bright acidity, long and flowing finish.
Made from Sasanihiki rice, polishing ratio 55%, 15% ABV, produced May 2023. Gentle sweetness on the nose, elegant and tranquil, hints of aromatic green herbs, bright and dry palate, mildly acidic finish with a hint of koji.
Made from Yumeikkon rice, polishing ratio 60% (both koji and kake), 6% ABV, produced September 2023. The sake equivalent of Federweisser. Thick and mildly sweet, floral and fruity, a dessert on its own.
