Opened 3 hours earlier. Yellow. Complex Chablis nose-apple, mixed citrus, flowers, and sea spray. Medium to full bodied, very textural. The flavors echo the aromas with great interplay of ripe fruit, acidic cut, and stoniness. This was just about at peak and profound.
France, Burgundy, Côte de Nuits, Gevrey-Chambertin 1er Cru
Opened and aerated for 3 hours. Ruby with minimal fading. Tart red fruit and earth. Medium weight. Crunchy mentholated cranberry fruit, bright acidity, tons of soil, and light tannins. Definitely coming out of its structured shell but not quite there yet. At least excellent with more time but not a mind blowing Clos St. Jacques.
2012 Agrapart Champagne Grand Cru Minéral Blanc de Blancs Extra Brut

Medium yellow. Nice balance of mature Champagne aromas and crisp, high acid, lemony fruit. Excellent.
