Dinner at Chui Huay Lim - Old World

Introduction
First time going to the famous Teochew restaurant, Chui Huay Lim. Food was great, especially the suckling pig and braised duck. Went well with the reds.
2013 Domaine Bertheau (Pierre et François) Chambolle-Musigny 1er Cru 93 Points
France, Burgundy, Côte de Nuits, Chambolle-Musigny 1er Cru
Upon opening, a beautiful bouquet of roses. Fruit is quite intense, stewed cherry and strawberry, sweet spice and some cedar. Super attractive and vibrant at this age, feathery tannins. Only complaint is that the palate lacked a little depth, showing the cool vintage. Blend of 3 premier cru vineyards.
After 5 hours, the wine changed to take on more dark fruited, licorice characteristics, violets and even mint. I enjoyed the evolution.

2016 Faiveley Gevrey-Chambertin 1er Cru Les Cazetiers 91 Points

The secondary flavours, especially of oak, were quite prominent. Vanilla,
toast, mushroom, forest floor and spice, with a core of dark berries. Palate is dense with muscular structure, but the finish fell a bit short.
Guessed Gevrey or NSG from a warm vintage. Became more integrated after 2 hours, though it still felt brash. A wine that shows potential and will hopefully improve with age.

2020 Domaine Marquis d'Angerville Volnay 1er Cru Caillerets 89 Points
France, Burgundy, Côte de Beaune, Volnay 1er Cru
Purple in colour. Blue and blackberries on the nose, with oaky notes of nuts and toast. Palate and nose became more sour cherry after a while. Very ripe fruits which took me to a warm vintage.
Unfortunately, the nose fell apart after an hour or so.

2010 Château La Gaffelière 90 Points

A pretty nose of red berries, plums and rose, warm sweet spice. Still quite primary. Plummy on the palate, low acid and tannins made it classic right bank. Feels premature for drinking now, I'd give it another decade.

2014 Château Lynch-Bages 91 Points

Ripe dark cherry and plums on the nose, with the slightest hint of pencil shavings. Thought this was Right Bank because I tasted red fruits, and no hint of bell pepper.
More structured than the Gaffeliere, but tannins are smooth. Not much secondary and tertiary development at this age. Wait to drink this.

2011 Val di Suga Brunello di Montalcino Vigna Spuntali 91 Points

An attractive nose: smoke, tea leaves and Mediterranean herbs, which immediately gave it away as sangiovese. A big wine on the palate: drying powerful tannins, quite harsh with the high acid and VA.
Correctly guessed Brunello. Still youthful, a long way to go.

2017 Domaine Dujac Gevrey-Chambertin 1er Cru Aux Combottes 90 Points

Definitely too closed and reserved at this age. Shy nose of nuts and spices (black pepper), holding back black fruits. Tight structure and elegant palate, but this needs time.

2016 Château d'Yquem 93 Points

Wow, first Yquem. Thought it would be too young but this was drinking well. Caramel and beeswax, the salinity made it quite a unique sweet wine. Very good acid that really tempered the sweetness. Lovely long finish.
