Made from 100% Verdejo planted in 1981, single vineyard near La Seca, limestone soil, organic viticulture, fermented and aged for 11 months in French oak (part new), full malo, 13.5% ABV, 12493 bottles produced. Creamy and fresh, wild flowers and apricots, precise and well balanced, salty minerality, gentle bitters, very good persistence.
Cool fermentation in stainless steel, aged for one year under flor in ancient Sherry butts. Beautiful terroir expression, citrus fruits, lemon zest, juicy and salty, warm spices and cool limestone freshness, green olive, excellent length.
