Made from Kamenoo rice (vintage 2022) polished to 90%, 14% ABV, bottled unfiltered and undiluted in March 2024. Light and fragrant and floral, forward and fruity, hints of candy and banana, lovely sweetness, the earthiness of the full rice grain, minerally freshness and a whiff of yeast, very good length. Fascinating, very different from traditional sake.
Made from Yume-Nishiki rice, polishing ratio 60%, SMV +1, 16% ABV, bottled April 2022. Mild sweetness, lovely umami, rice sweetness, good weight and concentration, relatively low acidity, very good length.
