Six course dinner at Staplehouse. According to the somm, this sparkling wine is a 100% Chardonnay from Argentina. It is a Blanc de Blancs wine, meaning it is a white wine made from white grapes. The wine is aged for 24 months in oak. TN: Heavy melon. Med weight. Nice. Great pairing with house bresola with cashew and finger lime and a lonzino pie tee made with cured pork loin and milkweed. Six course dinner at Staplehouse. This bottle was a gift from the owners of World of Quercus so I decided to bring it to this dinner since Staplehouse and Quercus are partnered. The wine had fresh farm green veggie nose. Med tannin. A bit dry. Paired with two courses: (1st: Bresola and lonzino pie tee; 2nd: house beef tartar with radish, pressed pear, and apple). Six course dinner at Staplehouse. I brought this bottle. PNP. Nose just jumping out of glass. Some folks in our group mentioned they got dill notes from the wine. I didn't. I got dark cherry notes on the palate and green bell pepper on the nose. This wine was paired with two courses. The 4th course was carrots with vadouvan and a tempura-fried sesame leaf. (The carrots were poached in their own juice, grilled, and seasoned with vadouvan, (a French-style curry that is more aromatic than spicy) and garnished with toasted cashews, cashew butter, and shaved carrots. The 5th course was Australian tritip wagyu served with an aerated beef fat foam and kale and sun choke. Great pairing with both courses. Brad - heavypourwine.com
