Introduction

Our annual trip to hotel restaurant Die Forelle, Techendorf in Austria to ice skate the 200km alternative 11-city tour on the Weissensee. The hotel restaurant got its Michelin star en green Michelin star the day before we arrived

    Medium+ intensity on the nose with yellow plum, yellow apple, minerality, just ripe mango, dried apple, firestone, smoke, salinity. Medium acidity, long finish. The palate is like drinking liquid stones, brilliant!

    This has spent 6,5 years on its lees in a large acacia wooden foudre

    Medium intensity on the nose with ripe fruit (mango, banana), lemon, elderflower, dried lemon. Medium+ acidity, long finish

    6,5 years on its lees in a 2000 liter acacia foudre

    Although I'm not a typical SB fan, there was a lot to like in this bottle. At 11 years it still felt young. Medium+ intensity on the nose with some boxwood, minerality, ripe gooseberry, red apple. Medium+ acidity, long finish. 91-92
