  Open about 18 hours. A little struck match, touch of citrus over stone fruit, sulphur, sweet spice, with time stone fruit shows a peach and citrus mandarin note. Juicy, tangy, very slight tart, mandarin here with a little rind, touch of alcohol warmth on the back palate, a little bacon fat, sweet spice, touch out of whack,, little tomato leaf note as well.

  butter, sweet spice, muted stone fruit is non delineated, oaky, quite rich. Sour, very oxidised on the palate, a little astringent, bruised apple, butter, bitter finish, FLAW.

• 2010 Hoddles Creek Pinot Noir 1er

  Australia, Victoria, Port Phillip, Yarra Valley

  Bacon fat lends a savoury note, red and blackberry, touch of rhubarb, forest floor, sweet oak spice, a little carbo crush fruit lozenge. Nice nose. More of the same on the palate. Juicy, fleshy, still fresh, tannins are slightly woody, drying and grippy, fruit and tertiary notes persists, finishes very slightly bitter but balanced, long, good.

• 2021 Tenuta Buon Tempo Furba Toscana IGT

  Italy, Tuscany, Toscana IGT

  Slight metallic/iron/blood notes join cherry with a meaty charcuterie underpin on the nose. With time and agitation a smidge of wet tobacco leaf. Medium plus intensity acidity, cherry, plentiful drying tannins are surprisingly talc textured, alcohol warmth helps carry the finish long. Simple.
