    Glass: Spiegelau Definition Bordeaux
    Clear, pale golden color with a salmon hue. Round, muted nose. On the palate round, noticeable sweetness, fine mousseux. Balanced, good structure, sweet fruit finish. Uncomplicated and drinkable now, but obviously very young. Maybe it gains depth with another decade of aging? 92+

    Tasted fully blind. Clear, medium salmon color. Interesting fresh nose with lots of strawberries. On the palate bone dry, good grip, some clean strawberry and rhubarb fruit and fine bitter notes. Tart, coarse, medium mousseux, not very complex, medium length. Thought it was some natural German Sekt :) Interesting experience, but no need for another bottle. Pairs certainly well with food, but for this price point, I would chose different bubbles. 90

    Very weird palate. Lacks acidity and appears very hot. I was at first at southern Rhone instead of Burgundy and Chardonnay. Some acacia notes. Well made, not my personal style. 90-91

    On the palate beautiful tension, pressure and energy. High 14% abv very well balanced, medium acidity. Fine floral and bitter notes. Creamy texture, deep, very good balance. Very long, complex finish. Has decades ahead. 94-95

    Clear, deep ruby-garnet color. Beautiful nose with speck, fine tobacco, fine red fruit, green pepper.
    On the palate very elegant and balanced. Fine red fruit, green pepper, velvet tannin, fresh and juicy and with a very good length. This wine is resting in itself. Beautiful. 95-96

    Perfect fill-level and cork. Opened 3h before, not decanted. Amazingly youthful clear, ruby glowing color.
    Nose a bit restraint, not as expressive as it could be. Opened up a bit in the glass.
    On the palate very young and fresh. Good tension and grip. Very tight, almost no fruit and some bitter notes. This bottle probably had a slight TCA taint, that eliminated the fruit. Otherwise the wine was very good, but not great. 93

    Tasted fully blind. Clear, deep garnet color. Wonderful complex and elegant nose! Smoky, ethereal, curry notes. Fresh and lively.
    Wonderful texture, elegance and balance. Beautiful harmony of all components. You feel, that this is an older wine, but it is so fresh, harmonious and lively. Unbelievable to see, that this wine was more than 100 years old! It was matured for 40+ years in various new barriques and filled in the late 1960ies. Perfect bottles like this are hard to find these days. Amazing experience, thank you Paco! 96
