Flight 1 - Gougeres and Cheddar (2 Notes)

  • 2014 Nyetimber Single Vineyard Tillington

    My wine. Second time tasting this - hard to believe they're the same wine. A slightly spiky nose - some energy and zip. On the palate - some sweetness (a lot of discussion at the table around dosage - I don't believe that one can ever really tell, but people are saying double digits...). Not much tension in this - it ends with some florality - some discussion about how this is reminiscent of the types of grapes that ESW used to be made of. Given the reviews and my previous experience, I do wonder if this is a duff bottle. In the interests of science I will be checking with my one remaining bottle soon. But this does *not* pass the Roederer collection test.

  • 2014 Vincent Dauvissat (René & Vincent) Chablis 1er Cru Vaillons

    France, Burgundy, Chablis, Chablis 1er Cru

    Pale color. Lovely character to it. Minerality - some discussion about whether this was steely minerality vs oyster shell minerality - I can't remember which was which, but minerality there was, as well as bracing acidity. A fellow diner remarked that this acidity needs to calm down a little - well this is fabulous now, so if it's going to further improve - nice work. My #2 WOTN and the table's #1.

Flight 2 - Wild Mushroom Pasta, Oyster Mushroom (2 Notes)

  • 2005 Simon Bize Savigny-lès-Beaune 1er Cru Aux Vergelesses

    France, Burgundy, Côte de Beaune, Savigny-lès-Beaune 1er Cru

    Some bricking. Earthy nose. Lovely energy to this - the colour made me think it might be a bit pruney but...not at all. There's a hedgerow character, maybe a little florality. It's got structure but the tannins are fully integrated. Things like this are what burgundy is all about - wines of character and structure and place.

  • 2005 Domaine Rollin Père et Fils Pernand-Vergelesses 1er Cru Les Fichots

    Purple garnet colour. Grippy tannins - there's a there there but it's hard to get to. Decent structure and acidity, one can perceive the fruit but it's just a bit hard to engage with. Proper grown up wine, though.

Flight 3 - Quail Ballotine, Bourgignon (2 Notes)

  • 2005 Domaine Ghislaine Barthod Chambolle-Musigny

    France, Burgundy, Côte de Nuits, Chambolle-Musigny

    Purple colour. Lovely nose - violets, strawberry leaf. The palate - nice, somewhat easy to get along with with good fruit, but somewhat discontinuous with the palate I felt. In the run of the evening - level seems to have won out to producer and village.

  • 2005 Domaine Lignier-Michelot Chambolle-Musigny Vieilles Vignes

    Purple / garnet colour. More open than the Barthod - a somewhat giving character. Pleasant, even lovely drink - hard to truly engage with it though, with what else was on the table.

Flight 4 - Roasted Veal, Potato Terrine, Cabbage, Green Peppercorn (2 Notes)

  • 2005 Domaine Rossignol Trapet Beaune 1er Cru Teurons

    France, Burgundy, Côte de Beaune, Beaune 1er Cru

    My wine. Garnet colour. Lovely nose, on the palate, dark fruits, earthy, hint of brett? Maybe just the smallest hint - there's a lovely earthy character to this, some density, that kind of savoury strawberry character i love in Cote de Beaune reds. I really enjoyed this, and it was doing exactly what was asked of it. Pleased to have a few more of these in the cellar, and I think they will continue to blossom over at least the next decade. My #3 WOTN.

    Candidly - i think it being my wine, and the fact I've had it several times before, biased me in favour of this wine. I'm choosing to feel OK about that.

  • 2005 Domaine Follin-Arbelet Corton Flawed

    Definitely corked. Definitely? Applying the Blach maxim, if you think it might be it is. Except - it kind of blows off. But what is left beneath it is also a bit weird - sauerkraut? There's some kind of something going on here. Interestingly - others found it perfectly decent, so I wonder if there was some particular character that I am more sensitive to.

Flight 5 - Sélection of Cheeses (3 Notes)

  • 2005 Domaine Fourrier Gevrey-Chambertin 1er Cru Les Goulots Vieille Vigne

    hmmmm. Well. We are getting towards the home stretch and note taking is starting to diminish. But this is the real deal, it has that kind of Fourrier precision to it, but real class and even heft. There's a long, almost sweet finish, I got a kind of wet gravel note - complexity, length, structure - if this wine came round to your house it would be well dressed, well coiffed and you'd want to hate it but you'd end up wanting to be its best friend. Sorry Mr Bize - THIS is what burgundy is all about. My WOTN and the table's joint #2.

  • 2005 Domaine Fourrier Gevrey-Chambertin Aux Echezeaux Vieille Vigne

    This was a more Fourrier Fourrier to me. I mean - i'm not complaining. There's balance to this - it has that fruit-cored precision, and just a little structure beyond that. I enjoyed the nose more than the palate, but they were fully congruent.

  • 2005 Louis Jadot Gevrey-Chambertin 1er Cru Petite Chapelle

    Handwritten notes starting to fade here - all I have is "fab". Lovely density and structure. Some discussion about this being a "Jadot" vs a "Gevrey" wine - I think both, but i'm a fan of the Jadot style and this was just as good as it should be. A meal spent contemplating half a bottle of this would be a meal well spent.

  • 2007 Château Lafaurie-Peyraguey

    In 2025 I committed to taking notes of the sweeties. I think this is my first. Let's see how I do. Golden colour. My handwritten notes say "Honey Porridge" - certainly a lovely texture to this, decent acid, no bitterness on the finish. Perfectly lovely and well put together stuff.
