Introduction

Nicolas Masse table

Flight 1 (1 Note)

Crab and lobster crumpet

Flight 2 (1 Note)

Chicken ballotine with winter tomato

  • 2007 Château Talbot Caillou Blanc 89 Points

    France, Bordeaux

More advanced than a previous bottle nine years ago, and where then the SB was more evident, now the Sem has taken over. Fullish straw. Sense of advancement. Lanolin and beeswax nose. Fresher than I feared. Nicely rounded awith reasonable length. A touch of furniture polish with air. Old dressers. Interesting. Improves over a couple of hours.

Flight 3 (3 Notes)

Roast calf’s sweetbread, truffled almonds and Sherry vinegar

  • 2002 Château Calon-Ségur 90 Points

    France, Bordeaux, Médoc, Saint-Estèphe

Broader and a little louche or even slightly flabby alongside the 01. Mellow. More rounded, gives a sense of more merlot.***1/2

  • 2001 Château Calon-Ségur 91 Points

    France, Bordeaux, Médoc, Saint-Estèphe

Refined and more poised on the nose and palate cf the 02 alongside. More slice and more tannin in the finish. Harmonious. As with the 02, somewhat short with a prematurely abrupt finish cf the 96GL. No fireworks but a decent wine. ****

  • 1996 Château Gruaud Larose 93 Points

    France, Bordeaux, Médoc, Saint-Julien

First of all baker’s dozen. Lovely nose, initially all St Julien with a touch of Cordier stable, goes through phases of tightening with more graphite, and relaxing with more cedar and sandlewood. Poised. Nicely structured. Some graphite o;the nose. Residual fine sediment providing some muddied bite despite a careful double decant. Minerally. Longer than the Calon duo. Lovely. ****

Flight 4 (4 Notes)

Aged beef fillet with oxtail, bacon and lyonnaise fondant

  • 2000 Château Léoville Poyferré

    France, Bordeaux, Médoc, Saint-Julien

Very smooth and plus, even a little lush. Could do with being a few degrees cooler to fine tune the focus. So poised andspherical though and a crowd pleaser in every sense. Lots here. Reminds me of a bottle of the 90 bottle last year. Gorgeous. ****1/2

    France, Bordeaux, Médoc, Saint-Julien

Surprisingly mellow and inviting on the nose though the spine becomes apparent on the palate. Classical. Nicely linear. Cooly attractive. ****

  • 1990 Château Mouton Rothschild 93 Points

    France, Bordeaux, Médoc, Pauillac

Full garnet. A touch of beef on the nose initially. Very smooth and mellow. Maybe not quite the stuffing and length for a top vintage but hugely drinkable. This is making a decent fist of it. ****

  • 2004 Château Pichon Longueville Comtesse de Lalande Réserve de la Comtesse 91 Points

    France, Bordeaux, Médoc, Pauillac

A touch of green pepper.younger and fresher, a change of gear here. The pepper o er a cool Pauillac frame. Nicely cool with a pinch if dark chocolate. A freshness too. ****

Flight 5 (1 Note)

Vanilla custard, Yorkshire rhubarb, pistachios and caramelised bricelet

  • 2001 Château Rieussec 93 Points

    France, Bordeaux, Sauternais, Sauternes

Deep bronzed amber. Saffron-rich medicinal botrytis-rich nose. A touch of burnt custard, rich but with nice focus and line. Super combination with the pudding. ****
