Agree with Aaron's note. Clean and fresh like a mountain stream, lemon energy, long finish. with Kombu-cured kingfish.
The others were served a Gruner Veltliner with their Abalone; I was given this to match the non-shellfish option.
With wagyu gyoza. This was lovely; great typicity, bright fruit, fresh and pure, zippy acidity on the finish. Asked for more.
With Japanese crossbred beef steak. Big and luscious, rich, quite glossy with it, enjoyed tho on the larger side for me.
The somm brought this at the end of the night as I had mentioned at the beginning that I loved it. Great way to end a terrific evening.
