    Spain, Galicia, Rías Baixas

    Elevated acid and barely perceptible minerally bitterness - like peach skin tannin. A medium plus length finish of peach. Medium intensity aromatics of just-ripe, fresh white peach terpenes. No hint of syrup. I like it - mineral, aromatic. Just ripe. No canned peaches.

    Apples and pastry crust. Sweetness and rich nose. Honeysuckle? Unbaked green apples and chilled baked apple pie. Like a slice of wonderful apple pie in the refrigerator.

    80% meunier.

    High acid. Balanced dosage - maybe 5-7g? Powerful fine mousse. Slight honey.

    Terpenes, some age - maybe slight oak.
    Dry. Elevated alcohol (feels 14%). Just-medium acid. Medium-plus bitterness.

    Initially, when it tasted dry, I thought of Muscat because it has terpenes but is dry. But then the structure was so clearly different: diminished acid, elevated bitterness, high texture/viscosity on the palate, and elevated alcohol. So I thought about Marsanne/Roussanne or Grenache Blanc blends, but these wouldn't be terpenic.

    Re-examining the nose, I found terpenes but also some savoriness - age or oak. Process of elimination led me to Condrieu.

    Well integrated. Best condrieu I’ve had? I get it now!

    Peaches and cream. Burnished wood.

    So wonderful. Black fruit. Savory.
    It's really doing all of the things that Bordeaux would do with maybe just a hint of its warm climate origin. I would 100% blind this as an older right bank Bordeaux. It danced and changed in the glass as well. Really, really good.

    Meaty, savory kissed by the sun. Ripe black fruit gets a lot fruitier when paired with the Wagyu. Aromatic and almost herbal notes are super super good. Medium-plus body, elevated alcohol, elevated acidity, medium soft tannins, well melted at this point.

    Lightly sweet. Slight reductive rubber, struck match at first, but it blew off. High acid. delightful with the fried chicken. Light terpenes and only faint suggestions of tdn.

    Elevated acid. Medium bitterness. Sweet. Beautiful nose. Hint of botrytis. Terpenes - fresh rose.
    Light on the palate. It had this seamlessness and elegance that was absolutely delightful.
