2016 Clos Rougeard (Foucault) Saumur Blanc Brézé 94 Points

Needed a lot of oxygen to reveal itself. Full buttercup yellow colour with a golden sheen; delicately honeyed nose, quince and hazelnut, intense and fresh, classic Chenin, linen and chamomile, deep limestone minerality; wonderful energy and acidity on the palate, lovely balance, yellow apple; zesty and salty finish, orange rind, excellent length. Perfect with pan-fried duck liver with a quince compôte made with quinces from our own garden.

Not decanted. Last tasted in October 2024 when it was magical (for an hour). This bottle has the same amazing freshness and youthful character, but without quite the fascination. Minty, deep, stemmy nose, amarena cherries, spicy warmth; rich and creamy, enveloping palate (15% ABV), firm but paper-fine tannins, hint of balsamic; zesty finish, excellent resonance and length. Many years in it. Went very well with steak au poivre with green peppercorn sauce prepared tableside.

Approximately 15 years of age. Nuts and oranges, hint of vanilla, energetic and precise, powerful but elegant, hint of heat of the finish. Perfect with crêpes suzette prepared tableside.
