This was the second meeting of our group. I feel we are pursuing an education in the hedonistic ways of the wine world. I’ll grant you, we may be less educated on this topic than other Chicago area residents. Therefore, the only way to advance our education is to set up study and research meetings such as these, and do it up right!
I am fortunate to have Ron Rozhon as a good friend, plus he is a great chef/caterer. In order to maximize our research, I asked for his “help” with this dinner and he quickly took over and planned out the entire meal and all the various courses. He and I discussed the flavor profile of the wine theme for the evening, and he researched and planned a great meal for us. He put forth great efforts to choose meats and create sauces that would echo the Australian Cabernets of the evening.
After devouring pistachio crusted rack of lamb, sautéed duck breast with roasted figs and blackberry gastrique, beef filet with gratinized shitake mushrooms over cabernet sauce, red wine sorbet with black pepper tuiles, and bittersweet chocolate cake, I believe we have experienced a post-graduate level educational experience.
Served with gougers (a plain, savory puff pastry)
Pistachio crusted rack of lamb with potato and caramelized pear puree.
Duck Two ways:
Duck cassoulet with canneloni and fava beans
Saute of duck breast with bacon braised napa cabbage, roasted figs and blackberry gastrique
Beef filet with a grantinated shitake mushroom glaze, roasted tomatoes, roasted garlic and cabernet sauce
Marquis Philips reduction sorbet with black pepper tuiles
Bittersweet chocolate cake
This is a great group of people. After all, it's good people that make these evenings so enjoyable. The grape juice doesn’t hurt, either. Contributions by everyone were very generous, and it created a very comprehensive wine list for the evening. I am convinced they can make a great cab down under. Even some that age…
I just have to say, I was just blown away by the food. One guest can still smell the duck…mmmm. I've enjoyed Ron's food many times at his house, but his research and attention to detail in matching food and wine for this event went far beyond my already high expectations. I feel fortunate that my wife and his wife were friends in high school. No credit to me, but the bar is now set pretty high. The comment was made more than a few times that the next guy to host (Brian?) is really in trouble.
Some details about the voting/scoring: After everyone had a chance to enjoy all of the wines in a flight, every wine in the flight was ranked 1st, 2nd, 3rd, etc by each person. First received a score of 1, second = 2, and so on. I then added up all of the scores for each wine. Lower scores are better. At the end of the evening, we each voted for a favorite flight and a WOTN.

My first sparkling shiraz, and I found it to be just delightful. Nice intense purple flavors and a little spice carried on a crisp, refreshing, sparkling chassis. The cork did not want to budge. It was humorous to watch everyone try to get it out until the top broke off. One brave guest was willing to go after it with a corkscrew while the rest of us ran for cover.
