We opened a '92, '93, and '94 vertical of Jarvis Cab. Bottles were opened a couple of hours prior to begining the tasting, but not decanted. First flight was done with just the wine, the second flight had grilled filet mignon drizzled with infused olive oil. The third flight was the following evening and was tasted with meatloaf and then paired with dark chocolate squares.
All in all some surprises and some expected results. Drinking the three bottles over two days, with and without foods really made the nuances in each bottle very noticable.

Somewhat closed bouquet of black fruit and coffee. As we began to taste, we found notes of dark fruit and smoke with a velvety mouthfeel as would be expected from a Dimitri Tchelistcheff wine. The moderate finish was a bit oaky--more wood than we would have preferred. We felt that some of the fruit was gone from this bottle and it might be a bit past it's prime, but still drinkable. I wish we had tried this five years ago, it must have been a real beauty at its peak.
The next night we finished the bottle and it had opened considerably and was showing more fruit and better balance. The next bottle we will decant for a few hours prior to drinking.
