Introduction

This was really fun and nice to introduce some of my local Chicago wine afficionados to a wonderful wine and food pairing - Champagne and Sushi!

Flight 1 (7 Notes)

  • NV Bollinger Champagne Special Cuvée Brut 90 Points

    France, Champagne

    Nose: Pinot dominated champagne nose with "crisp" notes on the nose with some aspirin pungency

    Palate: Nice, not acidic. Alomonds with a very slight floral aspect.

    Overall: Good value when compared to other industrial champagnes. 90 points

  • 2002 Lamiable Champagne Grand Cru Cuvée Les Meslaines Brut 92 Points

    France, Champagne, Champagne Grand Cru

    Nose: Yeastiness of a wet bakers yeast varietal accompanied by granny smith apples.

    Palate: Crisp came to mind. Acidic but the acidity was definitely not overpowering. Smooth overall.

    Overall: The nose initially led many of the attendees to think that this champagne had significantly more age than it actually did. Another aspect from a sight perspective was that this Champagne had great pearl strands - very tiny and tightly wound. 92-93 points.

  • 1996 Henriot Champagne Brut Millésimé 91 Points

    France, Champagne

    Sight: Yellow straw color gave indication of some bottle aging

    Nose: Nice chard dominated champagne notes such as white fleshed tree fruits with green apple dominating supported by some nice spicebox notes like anise and ginger (of course please keep in mind these are subtleties)

    Taste: Wet bakers yeast and bakery shop notes accompanied by some diacetyl creaminess. Wisps of vermouth and a passing fancy at cloves.

    Overall: This champagne was paired with some americanized sushi roles meaning they had plenty of mayonaise and I found that the chard-based crispness and tarty aspect cut perfectly through and paired superbly with the rolls. 91 points.

  • 1997 Laurent-Perrier Champagne Brut Millésimé 89 Points

    France, Champagne

    Nose: Lemon zest notes accompanied by some faint supporting citrus chorus. Lilly flowers - more specifically star gazer lillies (as stated by a female attendee of the event)

    Palate: One of the first things I noticed was how frothy and creamy the mouthfeel presented itself.

    Overall: The person that brought the champagne thought is was largely unremarkable, but I tend to disagree and think that it was ok - 87 point spectator vintage and I felt it was fine to serve. 89 points

  • 1998 Moët & Chandon Champagne Cuvée Dom Pérignon 92 Points

    France, Champagne

    Nose: Minerally type of aspect accompanied by more florals than I am used to on a Dom Perignon backed up by some vanilla notes

    Palate: Very nice and elegant - well balanced. Some coffee notes starting to emerge - stuff that I love and have experience with Henriot champagnes. Acidity is there with a very subtle tweak of sweetness that prevents this from being too dry.

    Overall: It's in between - age showing, but yet still youthful and zesty - for me this aspect worked wonderful this evening. Very elegant and nice! 92-93 points

  • 1996 Moët & Chandon Champagne Cuvée Dom Pérignon 91 Points

    France, Champagne

    Nose: yeasty notes accompanied by some candied citrus and some floral wisps

    Palate: Textbook and classic Dom profile champagne. A very sexy and alluring champagne that is solid all the way across the palate - very rich and creamy texture.

    Overall: I liked the 1998 better this evening. Yes, I know - I can hear the boos and hissing. For whatever reason the 1998 struck me as more interesting this evening. 91 points.

  • NV Marguet Champagne Grand Cru Brut Rosé 89 Points

    France, Champagne, Champagne Grand Cru

    Nose: Red bush fruits

    Palate: Scrunchy-esque berries in a decent champagne. Citrus peel on the palate in the general direction of lime.

    Overall: Not a Rose that I would seek out, but decent. 89 Points.

Everyone was impressed and cited that we need to do these kinds of pairing more often! I know I plan to do so!
