  Sweaty nose, toffee, cream, and on the palate a sherrylike marmite savouriness - but it grew fresher in the glass, and tasted a lot better with the calamari canapé.

  This too had a slightly sweaty nose, elusive at first, it grew nuttier and ended up toffeeish. A pleasant enough burgundy on the downward slope, but disappointing for a Montrachet.

  A reductive nose, but this blew off, leaving a beautiful, piney, serious, luxurious tasting burgundy, deep, with a real mineral bite

  Silky, red fruited, tangy and plumper than previous bottles, with a bit of bacon fat, fresh and elegant

  Shy cherry nose, on the palate riper than I was expecting, it took a while for the red raspberry fruit to get going, but this was another very elegant Volnay

  This was much the biggest of the three Volnays, showing some of the same rich cherry fruit, but riper, more powerful, with undergrowth and game - still young, but already beautiful and impressive

  A mystery wine. Brown and cloudy, and not very appetising to smell, but on the palate the stalkiness and the saltiness came together to make for a rather engaging over-mature wine. If we'd not been told it was a 1993, I'd have guessed it as an early 60s burgundy.

  Dense, gamey, with lot of grip, substantial, satisying, but seemed lacking in refinement after the volnays

  Smelled tannic and earthy, but on the palate, really fresh and effervescent, the whiff of the farm lifting the earthy fruit, quite exhilarating

  A perfect combination of purity and power, still very young, but already showing fine red fruit, a cool aristocratic elegance

  Next to the Rouget Parantoux this was a real animal, very smoky, lots of bacon, could almost be côte-rôtie, a lovely wild wine
