Introduction

For me, visiting and tasting with Vincent Dauvissat was one of the greatest experiences of a vinous life time. We were first shown the range of '05s. Luckily, our visit overlapped with those of a wine journalist from France and trade people from London, so we also had a chance to taste 2 older wines.

  • 1995 Vincent Dauvissat (René & Vincent) Chablis 1er Cru Vaillons

    France, Burgundy, Chablis, Chablis 1er Cru

    This completely changed my mind about this cuvee being only for relatively early drinking. I have had Forest at this age and older, but not Vaillons. Pale, limpid and with more complexity than I've ever tasted from this vineyard, it was excellent.

  • 1985 Vincent Dauvissat (René & Vincent) Chablis Grand Cru Les Clos

    France, Burgundy, Chablis, Chablis Grand Cru

    Then we were shown another wine blind that was piercing, also young, and laced with layered minerality. The length on this wine was astounding, and the flavors reverberated all day. I guessed '90 something, but it was the '85 Clos. What a wine! M. Dauvissat also opined that these wines showed a bit more advanced than usual because of being badly treated by construction that has been going on in his cellar! If he only knew what real mistreatment of his wines was...

Closing

Apart from deepening my love and respect for this domain, the message I took away from this experience is that however long you are aging these wines, it is not enough to allow them to express the greatness they can eventually develop. Amazing.
