Introduction

Little sign of 1990 tiredness here. The champagnes both showed superbly as did the Palmer. The three new world cabs were all brilliant.

Flight 1 - Aperitif, with beetroot and mackrell (2 Notes)

Flight 2 - With consommé of roasted squid with poached squid, razor clams and small garlic ravioli (2 Notes)

Flight 3 - With slow cooked roscoff onions with confit chicken, lardo di colonnata and cèpes (2 Notes)

Flight 4 - With roast best end and saddle of piglet with white carrots, girolles and a sauce of dried chickory (2 Notes)

    Amazing depth, very Penfolds with its charred oak and sweet berried fruit, grippy and youthful, for all its size very lively

    After the big assertive new world cabernets, this seemed quite restrained, some earthiness on the nose, possibly TCA, tannic, fine fruit - this probably sufferered from being served in such big company
