Flight 1 - Morning Class (11 Notes)

A very engaging class with a wide variety of wines tasted with dim sum as well as roasted meats and lobster noodles.

    Lots of fresh bread rolls and soft white bread. Yeasty. Sweet pomelos and ripe grapefruits.

    Morning grass, a bunch of smoky hay , savorty sweet kumquats and gooseberries. Nice, fresh and atypical.

    White pebbles, white stonefruits, sweet camomile florals, make for a seductive nose. Wet stones with a lovely streak of minerality running through. Lemon peel freshness with complexity and depth. Oily afterfeel. Very versatile wine especially with the range of dim sum food pairing.

  • 2006 Beringer Vineyards Chardonnay Private Reserve 82 Points

    USA, California, Napa Valley

    Lemons, white pepper, white gunsmoke with lots of vanillin oak. Sweet ripe lemon custard with traces of mineral-lifted sparkle but really lots of lemon candy. An expected robustness from a napa chard.

    Raspberry flavoured gummi , pinkish grapefruit and lots of red fruit skin. Has minerality and hay too. Semi sweet but finishes with some bitter pith.

    Rusty beef blood, earth, wet dog fur . Velvety mouthful of exotic spiced cherries and berries. Sikly tannins. Quite nice and good looking.

  • 1997 Château Figeac 87 Points

    France, Bordeaux, Libournais, Saint-Émilion Grand Cru

    Very austere and backward at first but opened up more so after 15mins in the glass. Rusty dusty shack , dried blood and dry earth with hints of smoke and sandalwood laced with mostly partially dried fruits. Very complex nose. Elegant and understated black fruits, earthy and drinking beautifully in its prime now.

    Sweet ripe raspberries and dark candied fruits laced with blackforest chocolate and lots of weight. That said, it is still very balanced.

    France, Bordeaux, Graves, Pessac-Léognan

    Honeysuckle, florals, apple juice left on the counter and subsequently very biscuity and sweet corn. Fresh mouthpuckering lemony acidity with lots of minerality . Chalky texture. Somewhat waxy . More lemon zest. At the moment, the nose and the palate doesnt quite seem to match. Needs time?

    Exotic spiced black fruits, some leather , some muskiness. Cassis, sappy black cherries , sourish with lots of acidity. Definitely needs time to gather its thoughts.

    Green herbaceous capsicums and alluring florals. Very seductive wine with dark florals-scented, smooth, rounded, generous and plummish dark fruits Some gorgeous integrated dark mocha notes and fresh tobacco leaves showing at the finish too. A beautiful classical margaux. Extremely drinkable now.

    France, Bordeaux, Libournais, Saint-Émilion Grand Cru

    Lovely leathery notes, meats, exotic brushwood notes, volatile wave of green peppers , tobacco and evolved with beautiful roasted meat aromas. Beautifully structured palate with nice al dente weighted fresh fruits. Succulent blackcurrants with nice acidity and ethereal finish.The palate just grows on you and increasingly becomes more addictive , silkier and enticing. The complexity shows and is truly a complete wine . Soft yet firm. Excellent wine! Drinking now with a long long way to go.

    Savory cool berries , cool meatiness and some cat's pee. I thought still pretty closed up. Dense blackcurrants and blackberry fruits. Mouth coating tannins.

    Unctuous rich dessert wine . Rich ripe apricot marmalade dripping with sun dried botrytis. Dense and sweet . Not yet cloying but i preferred a bit more acidity. That said, still a top class dessert wine I would have anyday.
