This was the society's 751st dinner at a favorite downtown Chicago restaurant. Chef Nugent did not dissapoint us with any of the courses as they married well with each wine course.
Passed Hors d'Oeuvres
Butter Poached Main Lobster, Crawfish and Trumpet Royal Mushroom Ragout
Sauteed Loup de Mer, Confit Leeks, Sunchoke and Riesling Emulsion
Seared Foie Gras, Confit Potato and Caramelized Onion Jus
Roasted Rack and Loin of Lamb, Chanteneay Carrot, Swiss Chard, Preserved Meyer Lemon Sauce Periqueux
Fromages Affines
Chestnut Bonbon Mousse, Coffee Ganache and Guanaja Chocolate Cremeux
Great dinner selection and wine pairings that Society member Phil brought together for the evening.
1999 Montaudon Champagne Brut Millésimé 91 Points
France, Champagne
Crisp, fresh, light yeast and almond flavors. Great to start the evening with.
