Hey! I am serving an Italian meal tonight at my house and I wanted to pair my wines perfectly.

I was thinking of serving 2 maybe 3 wines, a white and a red.

Here are the dishes....

Braised Broccoli (very simple, oil, salt and pepper etc...)

Four Cheese Risotto (parmesan, gorgonzola, fontina, and emmenthal cheeses)

Diced Chicken with Almonds ( almonds, soy sauce)

So what do you recommend?

I'd prefer not to open up any of the better wines at this time...

Here's my suggestion:

One way to make it easier would be to (largely) keep the Italian theme (except for the aperitif)

1. Start with the Chandon Rose Sparkler. I think that all good meals, formal or not, deserve a glass of bubbly as an aperitif. Most of us do not do it enough.

2. Pair the broccholi with one of your friuli or if served with the risotto a bigger chardonnay will stand up to it. You have several white burgs or CA chards which would be fine choices.

3. With the chicken, I would recommend your '00 Barbera. I particularly like Barbera with chicken, especially if it is encrusted or more heavily seasoned.

I like a crisp white with braised vegtables. So the 2005 Louis Jadot Mâcon-Villages would work. This would also work with the risotto.

Personally I think it is very hard to match soy sauce with a red. The Martin Codax Albarino would be my pick.

Then after the meal if you were still inclined one the Domaine Chandons with some fruit would be a nice finish.

If you'd invite me I would bring along some fruity Pinot Blanc from Alsace - Zeysoff. I've served the 4 cheese risotto myself a few times and the pairing of this excellent (and cheap!) French white is a 5-star combo. But if I'd have to settle for your otherwise nearly perfect selection of wines, I would intuitively go for the Friulian ones. They are usually also quite fruity and somewhat acidic and pair very well with cheesy risottos. And by the way, I would splash a spoonful of that grappa into the risotto as well.

The Friulian whites (don't know either one of those which you have, though) tend to stand up quite well with foods which usually are not easy to pair with a white wine in general. I've been to the area (Trieste) several times and always choose a local white to go with the excellent food (mostly seafood dishes but with variety of spices and tastes) and I could imagine soy sauce to work well with the wine.
