everything is roasted together

s+p rubbed on the salmon
bok choy, green cabbage, and shiitake mushrooms tossed with grated garlic, grated ginger, evoo, and s+p
wasabi mayo with grated ginger and grated garlic served on the side

thinking maybe a Rhône white from central coast, '02 auslese, '06 cool(er) climate Syrah from Northern California, or central coast Grenache.

thoughts?

For me it would be a Kabinett or Loire Chenin Blanc, or possibly a Beaujolais.

Rose of grenache or grenache blanc or something long those lines, but definitely a pink or white Rhone varietal.

ding ding ding! went with 70/30 Viognier/Roussane, 2010 Herman Story Tom Boy.

That is a tough one; Oz Clarke in his wine guide has declared wasabi a wine killer. I don't know if I agree with him, but I think that is the aspect of your dish that will dominate and what you should try to focus on in the pairing. The easy answer is probably Champagne (when is Champagne not a good answer?). I would be tempted to go for one with a bit more body; one that had a high percentage of Pinot, perhaps even a blanc de noirs.

The other idea might be to go for a Gevurtztraminer. A big unctious one from Alsace like Zind Humbrecht or Pffaenheim's Steinert.

one of the best dishes I've made in awhile, and pretty healthy in comparison to the normal fare in my house. here is the recipe.
