I want to introduce Vin des Temps, 2011 Noble Red Blend of 39% Cabernet Sauvignon. 34% Merlot. 27% Malbec...100% Wine Of The Times The Story Vin des Temps is a hommage to the great wine regions of France, creating traditional varietal bottlings expressive of their old world heritage. Two emerging négociants partner in a conspiracy with coastal California winegrowers to emulate the respective styles from Alsace, Burgundy, Bordeaux and the Rhone. The Wine This claret-styled Cabernet blend is sourced from vineyards situated 1,000 feet up in the Santa Lucia range, near Monterey. The calcareous shale-loam soil lends an enhanced mineral complexity while providing both drainage and aeration. During harvest, micro-blocks were picked alternately to maintain the consistent phenolic ripeness ideally suited for these noble varietals.
