Thanks! I drink absolutely zero sauv blanc, but by accident had two in our wine fridge, one logged into CT, one not. One is a 2009 Tres Sabores from Napa, the other 2014 Bote (Bowls of the Earth), home grown and made by a co-worker. I popped them both and the younger wine is crisper, the older more buttery. Both will work well, butter and lemon is now my plan for the scallops, and both will probably get consumed this evening! Cheers!
