Seasoning has a lot to do with these things. The scallops would go well with chardonnay and sauv blanc, for instance. But add tarragon, and you definitely want sauv blanc. If a lemon-butter sauce is involved, then chardonnay is likely to be the better pairing. Both will go well with a crab stuffed mushroom, though here I'd lean toward SB unless the chardonnay is an unoaked, restrained style or, glory of glories, Chablis-like.

Thanks! I drink absolutely zero sauv blanc, but by accident had two in our wine fridge, one logged into CT, one not.

One is a 2009 Tres Sabores from Napa, the other 2014 Bote (Bowls of the Earth), home grown and made by a co-worker. I popped them both and the younger wine is crisper, the older more buttery. Both will work well, butter and lemon is now my plan for the scallops, and both will probably get consumed this evening! Cheers!

From your cellar, the Pinot Blanc could work. Or one of the Marsanne whites. But I don't know these producers. Needs to be quite dry or the wine will seem odd next to the crab.
